Muffy’s Gingerbread Boxer Biscuits

Several people…well 5…have asked for the recipe for the treats which were pictured in Muffy’s post.  Since Muffy is tuckered out after a fun-filled day of playing with her Christmas presents, I told her I would type it up for her.  Here it is:

Gingerbread Boxer Biscuits

3 cups whole-wheat flour
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/4 cup + 1 tablespoon vegetable oil
1/2 cup molasses
1/2 cup water

Heat the oven to 325 degrees.  Coat a baking sheet with cooking spray or oil.
In a large bowl, sift together the flour, ginger, and cinnamon. Mix in the oil, molasses and water, then let rest for 15 minutes. (I actually use my hands and knead it.)

On a lightly floured surface, roll out the dough until 1/4″ thick. (The dough will be kind of crumbly.)  Cut out using cookie cutters, re-rolling the dough scraps and cutting out more as able. Transfer to the prepared baking sheet, then bake until firm, about 20 minutes.  Cool on the baking sheet, then store in an airtight container. (The original recipe is from the Everyday with Rachel Ray magazine.)

All three of the kids LOVE these, and they are relatively easy to make, taking about 10 minutes prep time and 20 minutes to bake.  These definitely score a “5 Paw” rating here at The Stampin’ Schach

A Muffy Post…Merry Christmas to All

‘Tis the season! The halls are decked and the dogs are jolly.  Well…at least half of that is correct.  We did not deck the halls this year, and for good reason.  Lexi is a one-pup wrecking crew.  Just like any kid at Christmas, she could not wait to get her presents, so Lexi and the Twins celebrated Christmas on Christmas Eve.  

Since this was Lexi’s first Christmas, the Twins were more than willing to answer her questions.  Let’s listen in…

Lexi:  What’s Kwistmas, Muffy?
Muffy:  Well, Lexi, Christmas is when our human families celebrate the birth of Jesus.
Brody: And Santa Paws brings us presents!
Lexi:  Who is Santa Paws?  Do I have to be afwaid of him?
Brody:  Nope! He’s also called St. Lick.  He comes down the chimney with a bag full of toys and treats for all the good dogs.  You don’t have to worry, Lexi.  He won’t be leaving you anything but a lump of cat litter in your stocking.
Muffy:  Brody! Stop it.  You know Mom doesn’t like it when you tease the baby.
Brody:  But she was bad Muffy.  Remember this card she tore up?

Brody:  And look what I caught on camera as she was trying to peek into the stockings this morning.

Muffy:   And whose camera were you using?  Is this the same camera you drug off the dining room table when you were a puppy?
Brody:  You are just sticking up for her because you used to tear up cards, too.
Muffy:  Let’s just get back to what happens at Christmas, why don’t we.  Another thing we do, Lexi, is bake Christmas cookies.

Brody:  And we also howl Christmas carols.  I love “Bark the Hairy Angels Sing”.
Muffy:  Or how about “Santa Paws Is Coming to Town”.
Muffy and Brody:  You better not bark, you better not howl.  You better not bite and you better not growl.  Santa Paws is coming to town…
Muffy:  We also take time to think about our loved ones who have crossed over the Rainbow Bridge.
Brody:  Like Missy the Boxer.

Lexi:  Who was Missy the Boxer?
Brody:  She was Momma’s first Boxer.  Missy now lives in Mom’s heart and also in this special vase called an urn.

Lexi:  Can I see her?  Will you come wif me, Bwody, and let me hold your paw so I won’t be afwaid?

Brody:  Come on, little Lexi.
Lexi:  Ohhhh! It’s beautiful…

Muffy:  Do you have any other questions about Christmas, Lexi?
Lexi: Just one…Can I please have the rubber chicken?
